Day 309: what did we order?

My friend B.Y from L.A wanted to have some Vietnamese hotpot. So we walked the streets and found some. Unfortunately Google fall to translate anything of the menu properly.

We order the Tuy bỏ something… As I know Bò is beef. But when the hotpot arrived, we have not idea what it is. It taste like internals, not intestine, but something soft and smooth. The soup base is very rich with chinese herbs. For the price and the portions, we believed we possibly order cow member’s part. Can someone translate?
